The sandwich unit in the kitchen is not working properly; crab is 53F egg is 48F. Provide proepr cold holding of 41F or below. They are preparing fish in the basement prep area and the temp-erature is elevated to 50F. Provide proper cold holdingof 41F or below.
Why This Matters
THE DANGER ZONE KILLS: Between 41°F-135°F bacteria double every 20 minutes. At 70°F, 10 bacteria become 10,000 in 2 hours, 10 million in 4 hours. Staphylococcus aureus produces heat-stable toxins that cooking cannot destroy. Clostridium perfringens causes 1 million illnesses yearly from temperature abuse. Listeria grows even under refrigeration, killing 20% of victims including pregnant women and newborns.
Code Requirements
ALL TCS foods MUST be held at 41°F or below at ALL times. This includes: All meat, poultry, seafood; Dairy products; Cut melons, tomatoes, leafy greens; Cooked rice, pasta, potatoes; Tofu, soy products; Sprouts; Garlic in oil. Check temperatures every 2 hours (4 hours maximum). If above 41°F for less than 2 hours, rapidly cool. If above 41°F for 2-4 hours, use immediately. If above 41°F for over 4 hours, DISCARD.

The high temperature dishwasher has a wash of 160F and a rinse of 160F. The instructions on the machine show that the temperature for the rinse should be 180F minimum. (Three compartment sink was setup to clean dishes until the dishwasher is working correctly)

Conformance w/ Approved Procedures
The lab test is expired. Provide anupdated lab test. The logs are not being maintained. Make surethe logs are updated daily and they are kept on record for 90 days. The pH meter is not working at the onset of the inspection and the manager needed to run out to get a new battery. Make sure the meter is being used and calibrated daily. The pH meter was designed for measuring the pH in an aquarium. Resubmit HACCP plan with changes and verify that the meter is made for testing pH of food. The HACCP plan has net been reviewed in the past year. Review the HACCP plan update any changes and provide a new copy to the health department.
