Manual Warewashing Equipment Hot Water Sanitization Temperatures (P)
The high temperature dishwasher is not reaching temperature and an irreversible thermometer run through the dishwasher was not reaching 160F. Repair the machine to be sure that equipment is getting cleaned and sanitized (the manager was able to setup the three bay sink to properly wash rinse and sanitize their equipment)

Improper temperatures allow rapid bacterial growth, potentially causing severe foodborne illness

Immediate correction required. Follow health code section 105 CMR 590.004. Implement proper temperature control procedures. Train all staff. Document corrective actions taken.
