Cooked chicken breast cooling in covered containers prepared 1.5 hrs earlier 85F (unit 34F) Food removed from container and placed in blast chiller. Rice and vegetables covered while cooling 62F cooked 2 hrs prior. Ensure proper cooling methods -loosely wrapped shallow pans or cooling in blast chiller. Seafood salad 46F - All items cooling in covered containers were placed in blast chiller.
