Food Protection

When employees complete the preparation of one task (slicing frozen chicken) they should pack and store the chicken or other product before starting another task to reduce the risk of cross contamination. During the inspection sliced chicken and chopped beef were observed within the food preparation area. Fish were observed in a strainer beside a strainer of vegetables. If the staff were switching between tasks without proper hand washing or the cleaning and sanitizing of equipment there exists the potential for the beef fish and vegetables to be contaminated by the chicken. Review with staff.
