Drain flies were observed in the preparation room during the inspection. Roaches were not observed within the restaurant but were sighted by patrons of the restaurant. Provide an Integrated Pest Management plan to address the pests. Management has contacted the exterminator. Treatments are scheduled for Wednesday evening (8/19/09).

Why This Matters

DISEASE VECTORS: Mice produce 50-75 droppings daily containing Salmonella, Hantavirus. Cockroaches carry 33 types of bacteria, 6 parasitic worms. Flies regurgitate and defecate on food, spreading E. coli, Shigella. One mouse can contaminate 10 times more food than it eats. Pest allergens trigger asthma in 26% of inner-city children.

Food Protection

Staff within the kitchen were observed storing salad mixing bowls on top of the salad greens. The Chef reprimanded the staff. The bowls were pulled off the line and put through the dish machine. The bowls will be stored on the shelving above the equipment.
