PIC stated they will be taken at lower level refrigerating unit later but no logs ice wand or other evidence of proper cooling methods performed. Ensure that proper cooling methods are performed (metal container ice wand ice bath ) and monitor time/temperature properly. PIC placed the beans in metal containers and ice bathed them before storing them inside walk-in.
