At the start of the inspection two frozen cuts of beef were observed in a 5-gallon bucket in the corner of the kitchen. The cuts were solid throughout and the owner stated that the cuts were to be transferred to the refrigerator for proper thawing. The ownership should review proper procedures with the staff. The beef was transferred to refrigeration prior to the end of the inspection.
