Observed employee removing chicken from grill to be cut and placed in hot holding service line. The internal temperature of the chicken was at 155F. Reviewed required cooking temperatures with PIC. Product placed back on grill to cook to 165F or above

At the time of the inspection the sanitizer automated dispenser was not functioning- Sanitizer bottle was hooked up but not properly working. No evidence of employee sanitizing following washing and rinsing Sanitizer bottle was removed Sanitizer was manually put into water at sanitizer bay and tested at 400ppm Continue to manually set up sanitizer until proper repairs are made to sanitizer dispenser
