The high temperature dishwasher gauge is fluctuating between 160F and 180F through a few cycles. A high temperature sticker ran through the machine while the gauge was only registering 160F and it turned color. Repair the dishwasher gauge.

Improper Maintenance of Floors
There is some buildup on the floor under the fryers. Clean.

CONTAMINATION RESERVOIR: Damaged floors harbor bacteria in cracks. Standing water breeds Listeria, Pseudomonas. Broken tiles create pest harborage. Floor contamination spreads via shoes, equipment wheels, and dropped items. CDC found floor drains positive for Listeria in 40% of retail delis.
