Make sure items are properly cooled from 140F to 70F in two hours and then from 70F to 41F in an additional four hours and that items are put into temperarture control when they reach 140F. Tomatoes are 60F in the reach-in cooler behind the action station and 53F in the in-line refrigeration near the station. Make sure items are properly chilled from ambient temperature within four hours.
