Wash water from the dish machine and pre-rinse collects on the soiled drainboard to the right of the basement dish machine. The installation of a leg beneath the drainboard at the open post should facilitate the proper drainage of the drainboard. One of the handles to a flip top cover on the right side of the kitchen service line is broken. The handle should be repaired.

Dishwashng Facilities
The bar's low temperature dish machine's sanitizing line likely has a slow air leak causing the sanitizing line to slowly lose prime over the day. Once primed the unit operates properly and adequately sanitizes the bar goods (50 ppm by strip). A service call was placed to EcoLab during the inspection. It will be serviced today. Management will contact the Health Division when the service call is complete.
