Cooked Shrimp stored above the other food at the upper side of sandwich unit registered 47F. PIC stated it had been there 1 hour and moved it to the lower interior part of the refrigerating unit. Maintain all TCS foods at 41F or below and store properly inside the refrigerating unit.

THE DANGER ZONE KILLS: Between 41°F-135°F bacteria double every 20 minutes. At 70°F, 10 bacteria become 10,000 in 2 hours, 10 million in 4 hours.
