1) Manager not able to properly demonstrate the set-up of 3 bay sink in order to properly wash rinse and sanitize all equipment. Manager to train all employees in set-up of 3 bay sink. 2) PIC and employees not able to explain proper cooking hot and cold holding temperatures manager / owner to properly train all empoyees.

Improper Maintenance of Walls/Ceilings
1) Extremely heavy grease build up on interior of hood and vents clean to remove. Ensure hood is being cleaned properly by employees and that duct work is being cleaned quaterly by proper hood cleaning company. Provide documentation of hood cleaning from company.
Why This Matters
OVERHEAD CONTAMINATION: Peeling paint and debris fall into food. Condensation on ceilings drips bacteria onto prep surfaces. Studies found ceiling tiles harbor Bacillus cereus spores. Restaurant ceiling collapse contaminated food service for 200 guests.
Code Requirements
Walls/ceilings must be: Smooth and washable in food areas; Light-colored for easy soil detection; Free of holes, cracks, peeling paint; Sealed at all joints and attachments; Clean and free of grease, dust, cobwebs; Non-absorbent in areas subject to moisture.
Corrective Actions
Repair all holes within 14 days; Repaint with washable paint; Replace damaged ceiling tiles; Seal all penetrations; Clean walls and ceilings monthly; Fix any leaks immediately; Install FRP panels in splash zones
