Par cooked chicken cooling on the top of the unit was 55F and then an hour later the chicken is still 55F. Properly cool chicken so it drops from 140F to 70F in two hours and then from 70F to 41F in an additional four hours. (discarded)

Cold Holding
The raw garlic and oil is stored on the top of the refrigerator at 55F. The fried garlic and oil is stored at room temperature 76F. The par-cooked chicken on the top of the refrigerator is 55F. Provide proper cold holding of 41F or below. Eggs are stored outside of the refriugerator for over an hour. Store eggs refrigerated. (all items discarded)
Why This Matters
THE DANGER ZONE KILLS: Between 41°F-135°F bacteria double every 20 minutes. At 70°F, 10 bacteria become 10,000 in 2 hours, 10 million in 4 hours. Staphylococcus aureus produces heat-stable toxins that cooking cannot destroy. Clostridium perfringens causes 1 million illnesses yearly from temperature abuse. Listeria grows even under refrigeration, killing 20% of victims including pregnant women and newborns.
