Improper Maintenance of Walls/Ceilings
Repair ceiling above the dish machine. Remove flaing paint on ceiling and pipes located above the dish machine. Repair ceiling in the dry goods storage roiom. Ceiling surface should be smooth durable non porus and easy to clean. Raepair wall behind dish machine in back room to Parkers Bar. In the pot room remove buildup of soils on pipes above the 3 compartment sink. Repair or replace pipe covering to pipe next to the dish tablw ion the diashroom.
Why This Matters
OVERHEAD CONTAMINATION: Peeling paint and debris fall into food. Condensation on ceilings drips bacteria onto prep surfaces. Studies found ceiling tiles harbor Bacillus cereus spores. Restaurant ceiling collapse contaminated food service for 200 guests.
