Non-Food Contact Surfaces Clean
One of the handles to the undercounter refrigerator to the left of the kitchen entrance was soiled. The ownership observed the food soil and the handle was cleaned. Bulk flour and cornstarch is stored on the second level to the left of the fish tanks. Spilled flour and cornstarch has accumulated around the base of some shelving and should be cleaned.
Why This Matters
INDIRECT CONTAMINATION: Dirty surfaces attract pests, harbor bacteria, and contaminate via contact or air movement. Dust from dirty shelves contains allergens affecting 32 million Americans. Grease accumulation creates slip hazards causing 25% of restaurant injuries.
