A large plastic container of clams was observed adjacent to a large plastic container of washed and dried chicken. After discussing the issue it was apparent that a misunderstanding of the regulation had occurred. The clams were removed and stored on a shelf above the chicken. Avoid the preparation of food on the drainage boards of the dish machine. The surfaces had been cleaned and sanitized.

Three soiled wiping cloths were observed on or adjacent to food preparation surfaces. The importance of storing cloths in sanitizer at all times was discussed with the ownership. The issue was corrected on-site.
