Staphylococcus aureus produces heat-stable toxins that cooking cannot destroy. Clostridium perfringens causes 1 million illnesses yearly from temperature abuse. PIC Performing Duties
PIC needs to monitor staff for proper holding temperatures of hot and cold food. Also work with staff so that when prepping food do not take out as much so that the temperature will stay at or below 41F. PIC needs to monitor general cleaning or the location proper food storage and maintenance of equipment (hood sticker).
