The items on the top of the sandwich unit are slightly elevated; mozzarella cheese is 45F vegetables 45F lobster 44F clamari 44F. Provide proper cold holding of 41F or below. The cooked lobster stored on ice is 82F. Provid proper cold holding of 41F or below (they will use as display and discard lobsters)

Why This Matters

THE DANGER ZONE KILLS: Between 41°F-135°F bacteria double every 20 minutes. At 70°F, 10 bacteria become 10,000 in 2 hours, 10 million in 4 hours. Staphylococcus aureus produces heat-stable toxins that cooking cannot destroy. Clostridium perfringens causes 1 million illnesses yearly from temperature abuse. Listeria grows even under refrigeration, killing 20% of victims including pregnant women and newborns.

INVISIBLE KILLERS: Bacteria survive on 'clean-looking' surfaces for days. Inadequate sanitization caused Salmonella outbreak affecting 1,500 people via ice cream. Cutting boards can harbor 200 times more fecal bacteria than toilet seats. E. coli survives 1-4 hours on surfaces. Norovirus survives 2 weeks. Food Protection

The oysters are all stored in the bags but in one container in the walk-in cooler. The tags need to be stored separated to prevent contamination from one bag to another in the walk-in cooler. The oysters on display have no sneeze guards and they are stored together in a way that the ice is dripping onto each other. Store the items in a way that they cannot contaminate the other food products.
