Inadequate Facilities/Cooling Methods
Although the equipment appears to be operating properly BISD recommends the use of a product / cooling log for the food items placed into the salad bar. The log should include the product name the time and temperature it was set into the salad unit and the time and temperature it was at the end of service. BISD met with the ownership during the write-up. The ownership agreed to produce the logs and provide them for review.
