Cooked vegetables cooled in a closed holding box(?).Products observed were roasted tomato and eggplant/zucchini product.Temperatures were at 70F+ and times given for cooking were approximations.Please review process so PIC can state exact process and has verified process and temperatures to see they meet requirements.
