Spoke to PIC Mitezzy and explained proper cooling methods. Ensure PHF foods are cooled to 41F or below before being presented for retail sale .Cooler temperature 38F. Other items in cooler within proper temperature range. Sandwiches prepared one hour prior. PIC took immediate corrective action and returned items to walkin cooler with containers open to finish cooling process to 41F or below.
