Employees are not familiar with their own HACCP plan. Review the plan and be able to demonstrate accurate testing of the sushi rice. The chef is not measuring the rice or using distilleed water when he's testing the rice. Their HACCP plan calls for 1/2 cup of rice and 6 tablespoons of distilled water. Make sure employees are following their HACCP plan when testing the rice.
