Clean dishes and trays run through the dish machine were observed behind the faucet handles of the adjacent/adjoining hand sink and around the basin of the hand sink. When washing hands soap water and soil from the hands can and were observed to splash onto the surface of the clean utensils. Utensils should be stored an adequate distance to protect them from cross contamination.

Food Contact Surfaces Clean

Dishes and equipment run through the dish machine for an unknown period of time have not been properly cleaned and sanitized. The detergent container (red supply line) was empty. The sanitizer line was dry. The health agent was unable to properly prime the line. Staff must inspect and confirm proper operation of the dish machine each day. Whereas the establishment does not have a three-basin sink when the dish machine is not operating properly the establishment MUST close. A service call was placed to service the machine. Suburban the service company stated that the machine would be repaired today. The health division will confirm.
