Rinse cycle registering 135F. Discontinue using high temperature dish machine for sanitizing equipment and utensils. Use bar machine or three bay sink with quats sanitizer until machine is working properly. Upon re-inspection The PIC is stating that Eco lab has determined that the booster is not functioning the machine will be replaced. An extension has been provided for the new dishmachine installation. Chef instructed to use the bar dishmachine & 3 bay sink for all ware washing
