Remove the [3] three - 50 pound bags of potatoes stored on top of the three bay sink compartments -ensure the sink is easily accessible during hours of operation - since the dish machine is a high temperature unit the water temperature can vary - oif the water temp is too high it will turn to steam and if it is too low it will not sanitize properly when the water hits the plate - Address
