Cooked chicken inside of the pizza cooler with elevated temperatures between 62-66F. PIC stated that the chicken had been cooked earlier in the morning. Discontinue and ensure porper cooling methods are in place. Chicken was removed at the time of the inspection to continue the cooling process.
