Controlling Pests (Pf)
At this time found droppings under soda cabinets in dinning room under hot holding line by grill and a few along garage doors in dinning room. Pest control is inspecting each week. Between inspections someone will need to be checking all traps to remove and replace if full. It would not hurt to have pest control address this issue more than one time a week for a while to get on top of the problem. General cleaning of areas should be done more often to see if you have any more activity.
Why This Matters
SEVERE CONTAMINATION: Rodent droppings carry 35+ diseases including Hantavirus (36% mortality rate), Salmonella (20% of cases from rodents), Leptospirosis (kidney/liver failure). Mice contaminate 10 times more food than they eat through urine and droppings.
Code Requirements
IMMEDIATE ACTION: Clean/sanitize all affected areas with 10% bleach solution. Discard ALL exposed food. Seal holes over 1/4 inch (mice) or 1/2 inch (rats). Remove food sources. Install bait stations. Professional extermination within 24 hours.

Door on the side of the building next to construction will need door sweeps. PIC will need to have cooking equipment cabinets shelves cleaned more often and report any findings to pest control company. General cleaning of the tables in dinning room area will help with food particles.

Code Requirements
Immediate correction required. Follow health code section 105 CMR 590.004. Implement proper food safety procedures. Train all staff. Document corrective actions taken.

Floors Walls and Ceilings-Cleanability (C)
PIC will need to address general cleaning of the floor under and behind storage cabinets and cooking equipment. Under soda cabinets found old droppings that will need to be cleaned up each day. Floor in dinning room should be cleaned more often of any food droppings for students.

Poor facility maintenance can harbor pests and prevent proper cleaning
