Cold Holding
The three-door flip top refrigerator in front of the grill and fryer is not operating properly. Chicken shrimp and beef stored within the unit was at a temperature of 45 to 50 F. The unit must be able to maintain a food product temperature of 41 degrees F or below. The food must be stored on self-draining ice or within another refrigerator until the equipment can be repaired. Cut vegetables were observed in a strainer set on top of the hand sink. Once the vegetables are cut they must be maintained under proper temperature control.
Why This Matters
THE DANGER ZONE KILLS: Between 41°F-135°F bacteria double every 20 minutes. At 70°F, 10 bacteria become 10,000 in 2 hours, 10 million in 4 hours. Staphylococcus aureus produces heat-stable toxins that cooking cannot destroy. Clostridium perfringens causes 1 million illnesses yearly from temperature abuse. Listeria grows even under refrigeration, killing 20% of victims including pregnant women and newborns.
